- 1 1/2 cups flour
- 2 TL Backpulver
- 1/4 tsp salt
- 1 cup powdered sugar
- 1/2 TL Lavendelextrakt
- 2-3 tsp water
How to cook:
- Turn on the oven to 375 F. Grease two baking sheets or use silpats to line them.
- In a blender, mix eggs, butter, sugar and lavender leaves. Blend on low until well combined and the lavender is broken into small pieces.
- Sift flour, baking powder and salt into a large bowl. Pour the wet ingredients over the dry and stir until combined. Place a tablespoon of batter on each greased baking sheet.
- Bake the cookies for 10 to 15 minutes or until the edges are golden brown. Cool completely on wire racks.
- Mix the sugar, lavender extract, and water in a small bowl with a spoon until you get a smooth glaze. When the cookies have cooled, spread a thin layer of icing on top and add a few dried lavender flowers for decoration.

Blackberry Lavender Cake
This blackberry lavender cake has both blackberry and lavender flavors. It's very moist and soft. The reverse creaming method ensures the crumb is soft, and the lavender milk and steeping syrup ensure the flavor is fragrant but not overpowering.

- 1 cup (240 ml) whole milk
- 2 teaspoons of dried culinary lavender
- 1/2 cup (120 ml) water
- 1/2 cup (100g) granulated sugar
- 2 teaspoons of dried culinary lavender

- 2 and 1/2 cups (295 g) cake flour (spoon & level)

How to cook:
- For the lavender milk, bring the milk to a simmer in a small saucepan over low heat. Take it off the stove and immediately add the lavender. Set aside to soak for 20 minutes. Place a fine-mesh sieve over a bowl and pour the milk through. Throw away the lavender. Before adding milk to the cake batter, let it cool completely. Can be prepared 1-2 days in advance and stored in the fridge. Before using it, bring it to room temperature.
- Make the lavender syrup
- In a small saucepan, bring sugar and 1/2 cup water to a boil over medium-high heat. Once it begins to boil, turn the heat down and add the lavender. Keep the syrup on low heat for 10 minutes. Remove from the heat and let sit until completely cool. Place a fine-mesh strainer over a bowl and pour the syrup through. Throw away the lavender. This "soaking syrup" will be used in step 8. Can be prepared 1-2 days in advance. Cover and leave at room temperature until ready to use.
- Do the baking.
- Set the oven temperature to 177°C. Line three 8-inch cake pans with parchment paper and re-grease the paper and pans. The parchment paper makes it easier to release the cakes from the molds.
- Mix the sour cream and lavender milk together until combined. Put aside.
- Sift the flour, sugar, baking powder and salt into the bowl of a food processor. (Or a large mixing bowl if you're using a hand mixer.) Using the paddle attachment, gently mix the ingredients on low speed for a few seconds. Add the butter, vanilla, and about half of the lavender milk and sour cream mixture. Blend on medium speed for about a minute or until the dry ingredients get wet. Stop the mixer and use a scraper to clean the bottom and sides of the bowl.
- Beat the eggs into the remaining sour cream and lavender milk mixture. With mixer on medium speed, add egg mixture in three parts, mixing for about 15 seconds after each addition. Stop the mixer and use a spatula to scrape the sides and bottom of the bowl. Mix an additional 15 seconds until the batter is fully combined. Avoid overmixing. Small bumps are okay.
- Divide the batter into the cake pans. If you want to be absolutely sure, you can weigh them. Bake the cakes for about 20 to 22 minutes or until done. Stick a toothpick in the center of the cake to see if it's done. If it's clean, the job is done. Let the cakes cool completely in their pans placed on a wire rack. Before you level and glaze the cakes, they must be completely cool.
- Using a large serrated knife, slice a thin layer from the top of each cake to create a flat surface. Throw it away (or break up and put on ice cream!). Spread lots of lavender syrup on each cake. I use up every drop!
- Do the icing.
- In a large bowl, beat butter and cream cheese using a hand mixer or stand mixer fitted with a whisk or paddle attachment on medium speed, about 2 minutes. With the mixer on low, add the powdered sugar, milk, vanilla extract, and salt. Turn the speed up to high and continue beating for 3 minutes. If the frosting is too thin, add more powdered sugar. If the glaze is too thick, add more milk. If the frosting is too sweet, add an extra pinch of salt. The frosting should be creamy and easy to spread, not watery. If you like, you can cut the frosting in half and tint half of it light purple. I put 2 drops of this mauve food coloring in the food.
- Assemble and decorate
- Place a cake layer on your cake stand, cake plate or serving dish. Cover the top with a thin layer of white icing. I used a Wilton 1A piping tip. Place 1/2 cup white frosting in a piping bag fitted with a large round tip. (Or use a zip-top bag with the corner cut off.) To make a "dam," pipe a ring around the top of the cake. To make a "smash hit," pipe a second ring of white icing a few inches inside the first ring. Spread the blackberry jam in between with a spoon. Repeat with the second cake layer, then place the third cake layer on top. Spread a thin layer of white frosting on the top and sides of the cake if there is any left. This is called a crumb coat. Place in fridge for 15 minutes to chill. Then use the purple frosting to cover the top and sides of the cake. I use an icing spatula to spread the frosting and I suggest you do the same. If you have extra frosting, you can pipe decorations on top. I used a Wilton 1M piping tip to make a swirled edge. Add blackberries for garnish.
- Before slicing and serving, chill the cake in the fridge for at least 20 minutes. This makes it easier to cut the cake into pieces.
- The leftover cake will keep well wrapped in the fridge for up to 5 days.

How to cook:
- Combine the butter, sugar and extracts in the bowl of an electric mixer fitted with the paddle attachment. Beat until light and fluffy.
- Next add the flour, salt and dried lavender buds and mix until well combined. It should be soft and easy to work with. If the dough is still sticky, add a little more flour, 1/8 cup at a time, until you can form a ball without it sticking.
- Form two balls from the dough. Flatten into a disc, wrap in plastic wrap or wax paper and chill in the fridge for about an hour. Placing the dough in the freezer for 20 to 30 minutes can reduce chilling time.
- Turn on the oven to 325°F. On a lightly floured surface, roll out the dough to a thickness of 1/4 to 1/2 inch, depending on your taste, then use your cookie cutter of choice to cut out cookies. Place a baking sheet that is not greased (parchment paper is fine).
- Bake for 10-13 minutes or until the edges of the cookies are light brown in color. Place on a wire rack to cool. Enjoy!
